I have now attempted to complete Red Thunder Zuma quest and a very Old Book quest. 3 times I have tried running round both maps 3-4 times making sure no mobs were left. Was not able to complete quest. Also, Nazgul Lord Challenge, It worked second time I tried it.
 
Both of the quests you mentioned have worked fine for me. The really old book quest you have to go into the side rooms at the far end of the map, "boss" mobs will spawn and the book will appear in your inventory. If I remember correctly there is no pop up or notification to saw it's complete but once you have the book you can TT and talk to the quest npc again, he will give you the reward. The RTZ quest there is a second floor once you've cleared the first that acts like a KR and multiple RTZ will spawn, you have to go in there and keep killing them.
 
I also completed the old book quest only for it not to be recognised as been completed. This was before last reboot tho, so will recheck, but if someone else is complaining I would think the problem still exists.
 
These quests are very old and quite abysmal. I don't think they will be in game much longer to be honest!

For the zumas you can skip to the second map and just kill the 5 RTZ in there.
You should get the VeryOldBook once you kill both Warlocks in the libraries, return that to the quest master

Any plans to replace them? I love doing quests. Completed all farmer quests (btw there are 96, the blue info text says 'over 100', I feel cheated hahah). Also completed all Giovanni quests except 'monster killing madness 2' because it's just sooooo time consuming to do only for that. If it was relevant mobs I'd happily do it, but not when there's zero other reason to be there but to complete quest.
